Asparagus Galette

Asparagus Galette made with Almond Flour Baking Mix Artisan Bread Recipe


1 box Simple Mills Artisan Bread Mix
1/2 cup water
1/4 cup olive oil
1/2 cup caramelized onion
1/4 cup creamy vegan cheese, plus more for topping
1 bunch asparagus, tough ends trimmed
1 tbsp fresh thyme, plus more for topping
Salt and pepper, to taste


PREHEAT oven to 375ºF and line a baking sheet with parchment paper.
ADD Artisan Bread Mix along with water and oil to a bowl and mix to combine. Form a ball with the dough.
TRANSFER dough onto parchment-lined baking sheet and flatten the dough into a 12-inch circle using your hands, moistening them with a bit of olive oil to prevent from sticking.
SPREAD caramelized onion onto dough, leaving about 1 inch of free space all around.
CRUMBLE vegan cheese and top with asparagus.
FOLD the edges of the dough over the filling.
CLOSE up any cracks that formed using your hands.  
SEASON with a generous sprinkle of salt, pepper and fresh thyme.
BAKE for 45 minutes.
REMOVE from the oven and garnish with more vegan cheese and fresh thyme. Serve immediately.
