Double Berry Pie

Double Berry Pie made with Artisan Bread Mix Recipe

Ingredients:

Crust and lattice
1 box Simple Mills Artisan Bread Mix
1/2 cup tapioca starch
1 tbsp ground flax or chia seeds
9 tbsp cold water
4 tbsp melted coconut oil

Filling 
3 cups fresh strawberries, sliced
1 cup fresh raspberries
1/3 cup coconut sugar, plus more for topping
juice of 1/2 lemon
3 tbsp arrowroot powder or tapioca strach

 

Instructions:

ADD Simple Mills Artisan Bread Mix, tapioca starch, and ground flax seeds to a large bowl. Mix to combine.
ADD water and melted coconut oil and incorporate using your hands until you are able to form a ball that does not stick to your hands, but that is still moist. If the dough crumbles, add 1 tablespoon of melted coconut oil.
SEPARATE the dough in two. Take one half of the dough and cover using a cling wrap.
CUT out 2 large sheets of parchment paper and place the second (unwrapped) half of the dough in the middle of one of them. Cover with the second sheet and roll out until the dough is as wide as your pie dish.
TRANSFER onto the pie dish. If a few cracks appeared, close them by with damp fingers. Poke a few holes at the base of the pie using a fork and place in the fridge while you preheat the oven.
PREHEAT oven to 400ºF. Once hot, place a parchment paper on top of your pie dough and cover with pie weights or dried beans. Bake for 15 minutes.
ADD strawberries, raspberries, coconut sugar, lemon juice and arrowroot powder to a large bowl. Mix until incorporated. Set aside.
UNWRAP the second half of the pie dough and roll it out between two sheets of parchment paper, ensuring that the dough is as wide as your pie dish. Cut into strips.
POUR berry mixture onto prebaked pie crust, cover with strips of dough forming a lattice design. If desired, sprinkle some coconut sugar on the top.
BAKE for 35 minutes or until the crust is golden.
LET cool before cutting into slices and enjoying with whipped cream or ice cream.
