Pumpkin, Pesto and Cranberry Crackers

The holiday appetizer of your dreams has now arrived.
Instructions:PREHEAT oven to 400ºF and line a baking sheet with parchment paper.
CUT pumpkin into half-moons of about 1/2 inch thick. Arrange on the baking sheet.
SEASON with olive oil, salt and pepper. Toss to distribute seasonings evenly.
BAKE for 20 to 30 minutes or until fork tender.
LET cool for 10 minutes.
SEPARATE the flesh of the pumpkin from the skin using a knife and running it slowly between the flesh and skin part of each half-moon.
CUT into 1 inch pieces.
GARNISH Simple Mills Garlic and Herb Sprouted Seed Crackers with hummus, a piece of pumpkin, a dollop of pesto and a cranberry half.
*You can use your favorite kind of hummus or swap it out for ricotta or even cream cheese.
