Savory Veggie Muffins made with Almond Flour Baking Mix Artisan Bread Recipe

Ingredients:

Box of Simple Mills Artisan Bread Mix
2 eggs
1/2 cup water
2 tbsp olive oil
1/4 cup apple cider vinegar
1/2 tsp garlic powder
1 1/2 tbsp ashwagandha powder
1/4 tsp chili flakes (optional)
1 cup shredded zucchini
1/2 cup orange or red bell pepper, diced
2 tbsp chopped basil

Instructions:

PREHEAT oven to 350ºF. Spray or lightly grease a muffin pan and set aside.
WHISK in a large bowl, eggs, water, oil, vinegar, garlic powder, ashwagandha powder and chili flakes, if using. ADD baking mix until just combined.
FOLD in zucchini, bell pepper and basil with a rubber spatula until evenly distributed.
DISTRIBUTE the batter between 12 lightly greased muffin cups, filling each 2/3 full.
BAKE for 25 minutes or until a tester comes out clean. If desired, broil for a few minutes to brown tops.
