Here in the Simple Mills kitchens, we’ve come up with something special that we think might satisfy those desires! Introducing the Simple Mills Not-So-Thin-Mint Truffles. Delicious, chocolatey, and holiday-friendly goodness! Read on for the recipe.
Here’s what you’ll need:
9 Simple Mills Chocolate Muffins (prepared as directed on package)
1 8 oz package of organic, grass-fed cream cheese, softened
1/4 – ½ tsp. organic peppermint extract
1 bag of Enjoy Life mini chocolate chips
How to make it:
Crumble muffins into a mixing bowl. Mix crumbled muffin mix with cream cheese and peppermint extract. Roll into 1-2 inch balls and place on a parchment-lined tray. Melt chocolate chips in a double boiler, let cool slightly and dip balls in melted chocolate. Return truffles to parchment and refrigerate again to harden.
Then simply enjoy!
A Note on Dietary Concerns:This recipe does contain dairy. Alternatives to cream cheese include coconut milk yogurt strained in cheese cloth (leaving a thicker product behind), or using very thick, high fat coconut milk. In this case, you will want to use less coconut milk so as not to over-moisten chocolate balls.X
