Around this time of the year, we know you’re looking for great party recipes that are friendly to your allergies and dietary concerns. Here in the Simple Mills kitchens, we’ve come up with something special that we think might satisfy those desires! Introducing the Simple Mills Not-So-Thin-Mint Truffles. Delicious, chocolatey, and holiday-friendly goodness! Read on for the recipe.

Here’s what you’ll need:

9 Simple Mills Chocolate Muffins (prepared as directed on package)

1 8 oz package of organic, grass-fed cream cheese, softened

1/4 – ½ tsp. organic peppermint extract

1 bag of Enjoy Life mini chocolate chips

How to make it:

Crumble muffins into a mixing bowl. Mix crumbled muffin mix with cream cheese and peppermint extract. Roll into 1-2 inch balls and place on a parchment-lined tray. Melt chocolate chips in a double boiler, let cool slightly and dip balls in melted chocolate. Return truffles to parchment and refrigerate again to harden.

Then simply enjoy!

A Note on Dietary Concerns:

This recipe does contain dairy. Alternatives to cream cheese include coconut milk yogurt strained in cheese cloth (leaving a thicker product behind), or using very thick, high fat coconut milk. In this case, you will want to use less coconut milk so as not to over-moisten chocolate balls.X

I love that book so much! I love Roald Dahl!!! I am so longing to watch that movie, hope it will not dspnpioiat me! The old movie was not very good, as the computer technologies were not as advanced at today. I have rather high hope, truly. P.S. Typical punch lines in the orginal book includes, ‘Square Biscuits that Look Round’! Oh, my goodness! Rowling is way out of his league. So fantasy… Fantastic, magical world is it. I can stand any dspnpioiatment from this movie. The only movie I have such a strong desire to watch within the last three to five years already.

Corn, that looks so good. I like new flavors, like yrelsuof. Not sure if you like cilantro; but here’s my twist on soft taco. Try it and tell me what you think. Whole wheat soft taco shells. Chicken breast cut into strips or ground. Marinate your diced jalapeno(deseeded), bell peppers, red onions, tomatos and cilantro in lime juice. Saute chicken strips or brown ground chicken, add desired taco seasoning, then add your corn and black beans. Assemble my fiesta taco and enjoy! Hope you like it!
