When summer rolls around, there’s one thing we’ve got on our minds here at Simple Mills: EXPLORING! Our team comes from all over (including Ohio, Michigan, North Carolina and Colorado to name a few), and road trips are one of our favorite ways to travel to make sure we can see everything. If you’re like us, though, you'll find that eating healthy on those long trips can be a challenge if you're not prepared. But no worries - we’ve got you covered with some of our favorite simple summer snacks.

These snacks will leave anyone feeling happy, energized and excited to keep on truckin'.


Roasted Chickpeas

Ingredients you will need: 
-1 can of chickpeas
-1 tbsp olive oil
-1 tsp garlic powder
-1 sprig of rosemary
-Salt and pepper to taste 


1. Preheat your oven to 400 degrees. Drain and rinse your can of chickpeas.
2. Lay your chickpeas onto a baking sheet and toss with 1 tbsp oil, garlic powder, rosemary, salt and pepper.
3. Put into the oven for 30 minutes. Rotate and then put it for another 10.
4. Take out of the oven and cool for 10 minutes before placing into tupperware.



Carrots and Hummus in Mason Jars

Pair this with our Fine Ground Sea Salt crackers OR Rosemary & Sea Salt crackers
Ingredients you’ll need:
-1 bag of small, organic baby carrots
-1 container of organic hummus (our favorite is garlic kale!)

1. Using 2 to 4 small mason jars, place roughly ¼ to ½ cup hummus at the bottom of each.
2. Add in carrots vertically sticking them into the hummus. Make sure you leave enough room to screw on the tops!


Peanut Butter and Cheddar Cracker Sandwiches

Ingredients you’ll need:
-1 box of Simple Mills Farmhouse Cheddar almond flour crackers
-¼ to ½ cup all natural peanut butter

1. Spoon a teaspoon of peanut butter in between two crackers to make mini sandwiches! Pack about 10-15 small sandwiches into a reusable, seal-able bag for on-the-go.


Dark Chocolate Covered Popcorn

Ingredients you’ll need:
-1 bag of organic, non-gmo popcorn
-½ bar of dark chocolate, broken into pieces
-1 tbsp coconut oil
1. Place your popcorn into a large bowl.
2. Melt your chocolate and coconut oil in a separate bowl for 30 second intervals until well melted (about 2 minutes). Stir after every interval.
3. Drizzle the chocolate/coconut oil mixture onto the popcorn and set in the fridge for 5-10 minutes. Take out and place into tupperware.

 



Make-Your-Own Trailmix

Ingredients:
-¼ cup mulberries
-¼ cup goji berries
-¼ cup almonds
-¼ cup dried cranberries
-¼ cup cashews
1. Combine the ingredients above in a large bowl and then ration out into how many containers you please!

For packing your road trip snacks, we recommend using glass BPA-free containers. Don't forget your favorite water bottle to refill along the way!
