1 paleo sandwich loaf made from 1 pack of Simple Mills Focaccia and Sandwich Mix

1 ½ cup of almond milk

1 tablespoon of cinnamon

1 teaspoon of nutmeg

1 teaspoon of vanilla (optional)

2 eggs

2 bananas (sliced)

Maple syrup

Coconut oil



  1. Bake 1 bag of Simple Mills Sandwich Loaf Mix according to the directions on the bag

  2. Slice loaf into ½ inch sandwich bread slices

  3. Mix almond milk, eggs, cinnamon, nutmeg and vanilla together in a large mixing bowl.  

  4. Dunk each slice of bread in the liquid and let it soak for 1 minute; If needed, flip the bread over to ensure the whole slice is soaked.

  5. Heat a pan over medium heat with coconut oil and pan fry each slice of bread on both sides until browned.

  6. In a separate pan, heat coconut oil and heat banana slices in coconut oil until caramelized on one side. (Both if you’re feeling extra sassy)

          To serve, drizzle one slice of toast with maple syrup and top with caramelized bananas.
