Let me just by begin saying that this is absolutely as good, if not better than it looks. 

This all began with my love for bacon wrapped dates; to me, the sweet, salty  component was one of the happiest marriages I could think of.  After a  girlfriend pleasantly surprised me with bacon wrapped apricots at a party, I  realized there is more to the world than bacon wrapped dates. My interest in  arranging the happiest possible marriage lead me to pancetta, for its  magnificent ability to wrap (like a warm blanket), and thin cut that finishes  perfectly crisp. One last mention, the scent of the sage in this will fill your  entire house! It really is the ultimate bow on the box. After tasting this creation  for the first time, I can’t wait to explore other herbaceous additions with more  exotic fruits. 

What I love about this recipe is that you really can make as many or as few as you want. Today I made them as a snack, which was for the best, as I could have easily eaten a dozen of these morsels. 

Dried Apricot Wrapped in Pancetta & Sage Leaf

What you will need:

Apricots (again, as many as you want)

Pancetta-one slice will be plenty to wrap 2-3 apricots

Sage Leaf-one leaf per roll


Bake at 350 for 18-22 minutes.
