We’re taking a break from pumpkin this week, because let’s face it, pumpkin is really stealing everyone’s thunder this fall. After all, as the weather is gets colder, nothing really warms our hearts like a crunchy, flavorful, hot-out-of-the-oven pizza!

With that in mind…we’ve teamed up with La Pasta to bring you PIZZA 4 FUN WAYS!  

We’re taking a not-so-classic spin on this Italian classic; because hey—playing with your food is fun in the right circumstances.  Simple Mills and La Pasta want to help get your creative juices flowing by taking out the complexities of cooking. WE give you the bases so that YOU can focus on the pizza building, your guests and, well, the eating of course!

The best part about these Simple Mills + La Pasta pizza recipes is that you can rest (or eat) assured that you are only feeding your family and friends simple-ingredient, nutrient-rich, DELICOUS foods! These 4 different pizzas will turn any meal or gathering into a Pizza Party.

Keep reading for Caprese Calzones, Mini Pizzas to make with your Mini-Me’s, Pepperoni Pig-Skin Pizzas, and a Date Night Pizza that pairs perfectly with a glass of white wine.

 

Caprese Calzones

Ingredients:

  1. Simple Mills Pizza Dough Mix
  2. 2 Tbsp Apple Cider Vinegar
  3. 2 Tbsp mild-flavored oil (Grapeseed, Olive, Vegetable)
  4. 6 Tbsp Water
  5. ½ - ¾ container of La Pasta Basil Pesto
  6. Approximately ½ container of fresh buffala mozzarella, sliced
  7. 2-4 cluster tomatoes, thinly sliced and halved
  8. 1 egg, whisked (optional for egg wash)
  9. 1 Cup Balsamic vinegar (optional – for balsamic reduction)

Instructions:

  1. Mix Simple Mills Pizza Dough according to instructions on package and let sit 1-2 minutes
  2. Preheat oven to 350F
  3. Lay down a large area of parchment paper
  4. Using a rolling pin, roll dough out on parchment paper to be about ¼” thick
  5. Use a pizza cutter to cut out circles about 5-6” diameter
  6. Repeat steps 3 & 4 until all dough is used
  7. Spread ½ tsp of La Pasta Basil Pesto on half of each dough circle (leave a space roughly ½” from the edge of the circle sauce-free)
  8. Place 1 halved tomato slice on top of Sauce
  9. Place 2-4 slices of cheese on top of tomato slice
  10. Sprinkle salt & pepper to taste
  11. Fold over the empty-side to cover the topping-side, being extra careful not to let the dough crack at the fold (if it starts to crack, you can lightly wet your fingers and rub at the cracks to form a seal)
  12. Use your fingers or a fork to press along the edges and form a seal
  13. Using a basting brush, apply a light egg wash to each calzone
  14. Bake for 30-40 minutes, until golden and hard to the touch

While calzones are baking, make the balsamic reduction:

  1. Bring 1 cup of balsamic vinegar to a boil and immediately reduce to a simmer
  2. Simmer for 25-30 minutes until desired thickness, keeping in mind that reduction will continue to thicken as it cools

Mini Pizzas with your Mini-Me’s

Ingredients:

  1. Simple Mills Pizza Dough Mix
  2. 2 Tbsp Apple Cider Vinegar
  3. 2 Tbsp mild-flavored oil (Grapeseed, Oilve, Vegetable)
  4. 6 Tbsp Water
  5. 1 container of La Pasta Marinara Sauce
  6. Preferred cheese of mini-me
  7. Preferred other toppings of mini-me

Instructions:

  1. Prepare Simple Mills pizza dough mix according to the directions on the package, but divide the dough into 3-4 crusts instead of only two
  2. Pre-bake them for 5 minutes so that they are sturdy enough to pick up. Allow crusts to cool until they are comfortable to touch
  3. Spread sauce onto crusts
  4. Assemble pizzas however you’d like – this is where the kiddos can express their creativity!
  5. Place pizzas on a cookie sheet or pizza pan and bake for 5-10 more minutes until the cheese is completely melted
  6. Optional: set the oven to broil for 2-3 minutes until the cheese is golden and bubbly.

 

Pepperoni Pig-Skin Pizzas

Ingredients:

  1. Simple Mills Pizza Dough Mix
  2. 2 Tbsp Apple Cider Vinegar
  3. 2 Tbsp mild-flavored oil (Grapeseed, Oilve, Vegetable)
  4. 6 Tbsp Water
  5. 1 Container La Pasta Pink Vodka Sauce
  6. 1 32-ounce Mozzarella Block
  7. 1 package of pepperoni

Instructions:

  1. Preheat the oven to 350F
  2. Prepare Simple Mills pizza dough mix according to the directions on the package
  3. Prebake both crusts for 5- minutes without anything on top
  4. Shred ¾ the block of Mozzarella. Cut the remaining into slices. This will be the strings of your football.
  5. Spoon a generous helping of pink vodka sauce on each pizza. Sprinkle mozzarella cheese on top. Arrange pepperoni in the shape of a football. Add mozzarella slices to resemble the strings of the ball.
  6. Return pizza into the oven and bake for an additional 10-15 minutes.
  7. Remove from oven and serve with your favorite La Croix variety or gluten-free beer!

 

Date Night Pizza Perfection

Instructions:

  1. Simple Mills Pizza Dough Mix
  2. 2 Tbsp Apple Cider Vinegar
  3. 2 Tbsp mild-flavored oil (Grapeseed, Oilve, Vegetable)
  4. 6 Tbsp Water
  5. 1 Container La Pasta Eggplant Sauce
  6. 1/2 cup of feta cheese (less or more depending on desired cheesiness)
  7. 1/4 cup olives of choice
  8. 5-10 fresh basil leaves, roughly chopped

Instructions:

  1. Preheat the oven to 350F
  2. Prepare Simple Mills pizza dough mix according to the directions on the package
  3. Prebake both crusts for 5- minutes without anything on top
  4. Spoon a generous helping of eggplant sauce on each pizza. Sprinkle feta cheese, olives and basil on top.
  5. Return pizza into the oven and bake for an additional 10-15 minutes.
  6. Remove from oven and enjoy along with your special someone and a glass of white wine.
