Apple Pie Baked Apples

Yield: 6 apple pies




1 box Simple Mills Artisan Bread Mix 
2 eggs
2 tbsp water
4 tbsp olive oil 
2 tbsp apple cider vinegar
1 tbsp vanilla extract 


4 granny smith apples, peeled, cored, and chopped
1 ½ tbsp cinnamon
¼ tsp nutmeg
1/3 cup brown sugar
3 tbsp Water
2 tbsp Unsalted Butter
1 ½ tbsp cornstarch
2 tbsp water


6 whole Granny Smith Apples, hollowed



MIX together dough ingredients in the bowl of a stand mixer on medium high using whisk attachment.

REMOVE dough, cover in plastic wrap and refrigerate for 30 min.

PREPARE 6 Granny Smith Apples, by slicing off the tops, and carving out center with a spoon.

COMBINE chopped apples, cinnamon, nutmeg, and sugar in a small bowl.

STIR together with spoon to coat the apples.

HEAT butter and 3 Tbsp water in a sauce pan on the stove on low heat. Once butter mixture is melted, toss in the coated apples.

In a cup, STIR together corn starch and 2 Tbsp water.

POUR in liquid cornstarch.

LET APPLES SIMMER  for 3-5 minutes to slightly soften, occasionally stirring.

REMOVE from heat.

PLACE dough on sheet of parchment paper. Cover with an additional layer of parchment paper.

ROLL out to 1/8-1/4 inch thickness. Remove top layer of parchment paper and slice ¼ inch strips.

FILL hollowed apples with filling.

PREHEAT oven to 400 F.

LAY 3 strips of dough across each apple. Letting excess hang from the sides.

TAKE additional 3 strips per apple and weave into lattice pattern of choice.

TRIM excess dough from the sides of the apples.

PLACE apples onto baking tray.

BAKE for 18-20 min until dough is golden and filling is bubbling.

COOL 5-10 min before serving.
