Blondies 3 Ways Inspired by Food52

 

Chocolate Cherry Hazelnut Blondies

Ingredients:

1 ¼ cups coconut sugar
14 TBSP butter, melted
2 eggs at room temperature
2 TBSP vanilla extract
1 box Simple Mills Vanilla Cake Mix
½ c dried cherries
½ cup dark chocolate chunks
½ cup hazelnuts, toasted

Or, if using 8x8 pan, bake as follows:
Bake 35 minutes, cover with aluminum foil, then bake an additional 15 minutes

Strawberry Tart Bars

Ingredients:

1 ¼ cups coconut sugar
14 TBSP butter, melted and cooled
2 eggs at room temperature
1 tsp vanilla extract
1 tsp almond extract
1 box Simple Mills Vanilla Cake Mix
¼ cup rolled oats
¼ cup chopped almonds
2-4 cups hulled and sliced strawberries
2 TBSP arrowroot powder

Bake for 25 minutes, add strawberries and crumble, then bake for an additional 20-25 minutes.

Lemonies

Ingredients:

1 ¼ cups coconut sugar
8 TBSP butter, melted
2 eggs at room temperature
1 ½ tsp vanilla extract
2 TBSP lemon juice
1 TBSP lemon zest
4 oz mascarpone or softened cream cheese
1 box Simple Mills Vanilla Cake Mix
¼ cup poppy seeds
