Chocolate Chia Raspberry Muffins

2 organic eggs
3 Tbsp coconut oil
1/2 cup water
1/2 cup chia seeds
1 1/4 cup unsweetened almond milk
3 tbsp raw cacao powder (or unsweetened cocoa powder)
1/2 cup fresh raspberries


PREHEAT oven to 350º.

MAKE Simple Mills Chocolate muffins according to instructions on box.

COMBINE separately: chia seeds, milk and cacao powder and let sit for 15-20 minutes to thicken, to form a chia pudding.

GREASE a muffin tin with oil and pour muffin mixture into each tin.

BAKE for 15-20 minutes.

LET COOL and glaze each muffin with 1 Tbsp of chia pudding, followed by a few raspberries, or throw one of these decadent, nutrient rich muffins in a bowl with your favorite fruits and nut butter.
