Coconut Caramel Pumpkin Bread

Ingredients:

1 cup water
3 Tbsp coconut oil, melted and slightly cooled
2/3 cup Dang caramel sea salt coconut chips, plus more for garnish (optional)
1 Tbsp coconut sugar
1/2 tsp ground cinnamon
2 Tbsp pepitas (pumpkin seeds), for garnish (optional)

 

Instructions:

PREPARE Simple Mills Pumpkin Muffin Mix according to instructions on box

FOLD in the coconut chips

POUR the batter into the prepared pan and smooth into an even layer

In a small bowl, WHISK together the coconut sugar and cinnamon

SPRINKLE the cinnamon-sugar mixture evenly over the top of the loaf

SPRINKLE additional coconut chips and the pepitas over the cinnamon and sugar

BAKE for 40-45 minutes until the coconut garnish is golden brown and a tester comes out clean

ALLOW to cool in the pan for 10-15 minutes before turning out onto a wire rack to cool completely

SERVE immediately
