Coconut Caramel Pumpkin Bread

1 cup water
3 Tbsp coconut oil, melted and slightly cooled
2/3 cup Dang caramel sea salt coconut chips, plus more for garnish (optional)
1 Tbsp coconut sugar
1/2 tsp ground cinnamon
2 Tbsp pepitas (pumpkin seeds), for garnish (optional)



1. Prepare Simple Mills Pumpkin Muffin Mix according to instructions on box

2. Fold in the coconut chips

3. Pour the batter into the prepared pan and smooth into an even layer

4. In a small bowl, whisk together the coconut sugar and cinnamon

5. Sprinkle the cinnamon-sugar mixture evenly over the top of the loaf

6. Sprinkle additional coconut chips and the pepitas over the cinnamon and sugar

7. Bake for 40-45 minutes until the coconut garnish is golden brown and a tester comes out clean

8. Allow to cool in the pan for 10-15 minutes before turning out onto a wire rack to cool completely

9. Serve immediately
