Coffee Cake

5 egg whites, whipped
1 Tbsp vanilla
3/4 cup of butter / ghee, melted
3/4 cup of coconut milk
1/4 cup of chopped pecans
1/4 cup of coconut sugar or brown sugar
1 Tbsp of cinnamon



1. Preheat oven to 350°F

2. Set aside 1 cup of mix in a separate bowl for topping

3. Combine remaining mix with 1 stick / ½ cup of butter and coconut milk

4. Add in whipped egg whites

5. Pour into a greased 9x13 pan

6. Combined chopped pecan, reserved mix, coconut sugar, and remaining butter until a crumble forms

7. Add crumble on top

8. Bake for 25 minutes
