Cookie Cream Sandwiches

1 box Simple Mills Chocolate Muffin & Cake Mix 
1/3 to 1/2 cup coconut oil or melted butter 
1 egg
1 tsp gluten-free vanilla
1 pint of your favorite ice cream (dairy-free, organic, etc.)


1. Preheat oven to 350°F

2. Mix all ingredients except ice cream

3. Drop dough by heaping tablespoonfuls onto a baking sheet lined with parchment paper

4. Wet fingers and flatten dough

5. Bake for 9-10 minutes or until firm in the center

6. Let Cool

7. Scoop ice cream and sandwich between two cookies

8. Place cookie sandwiches on baking sheet and freeze for 30 minutes to one hour prior to eating

9. Sandwiches can be stored in wax paper in the freezer
