Freezer Friendly Waffles ( 2 Ways)

Cook time: 20 minutes
Yield: 9-10 Belgian waffles; depends on your waffle iron

 

Ingredients
For the waffles:
5 large eggs
2/3 cup water
3 Tbsp. oil
1 box Simple Mills pancake and waffle mix
 
CHOOSE YOUR VIBE:
Sweet:
2 Tbsp. full-fat, unsweetened yogurt of choice
1/8 cup blueberries
1/8 cup strawberry, sliced
1 Tbsp cacao nibs
1 Tbsp nut butter
Cinnamon, to taste (optional)
 
Savory:
2 Tbsp. full-fat, unsweetened yogurt of choice
2 slices of bacon
1/2 avocado, sliced
1/4 cup arugala
1 Tbsp. chives, diced
1 Tbsp. nori, crushed (optional)
 
 
Instructions
TO MAKE:
PREHEAT your waffle iron.
WHISK the eggs, then whisk in the water and oil.
STIR in the Simple Mills pancake and waffle mix and whisk until well-blended.
GREASE the waffle iron once it is pre-heated.
POUR batter into the iron and cook according to the manufacturer’s instructions.
COOL waffles completely, then stack in an airtight container. Separate each waffle with a piece of wax paper or parchment paper.
COVER and freeze until ready to eat.
 
TO ENJOY:
THAW the waffles on the countertop or microwave them in a heatproof container.
TOP waffles as desired.
