Midnight Cupcakes

3 eggs
1/2 cup cold brew coffee
1/3 cup coconut oil, melted and cooled
1 tbsp vanilla extract
1 box Simple Mills Chocolate Muffin & Cake Mix
1 tub Simple Mills Chocolate Frosting
Golden sprinkles (optional)


  1. Preheat oven to 350┬║F. Line cupcake pan with cupcake liners.
  2. In a large bowl, mix eggs, coffee, coconut oil and vanilla extract. Slowly mix in baking mix.
  3. Spoon batter into prepared muffin cups, filling each 2/3 full.
  4. Bake for 15-20 minutes or until a toothpick comes out clean. Let cool completely before frosting.
  5. Allow frosting to come to room temperature. Microwave for a few seconds and stir for extra spread-ability. Mix frosting until smooth and spreadable. Transfer to a piping bag or Ziploc bag.
  6. If you are using a Ziploc bag cut a corner off. Pipe chocolate frosting.
  7. Top with golden sprinkles.
