Mini Lemon Poppy Seed Bundt Cakes

3 eggs
1/3 cup coconut oil, melted and cooled
1/3 cup water
1 Tbsp vanilla extract
Juice from 1 Lemon
1 box Simple Mills Vanilla Cake Mix
2 Tbsp Lemon Zest
2 Tbsp Poppy seeds


PREHEAT oven to 350F and grease a mini bundt pan (any size bundt pan or muffin tin will work)

WHISK eggs, water, oil, vanilla extract, and lemon juice. Add baking mix, mix until well blended

ADD in lemon zest and poppy seeds, fold until well blended

POUR batter into mini bundt pan

BAKE for 15-20 minutes

REMOVE from oven and let cool. Once cooled, top with melted coconut butter, slivered almonds & raspberries
