Yield: 12 brownies

Ingredients  

1 box Simple Mills Chocolate Muffin & Cake Almond Flour Mix
3 eggs
1 tbsp vanilla
6 tbsp butter
3/4 cup coconut sugar
1/8 tsp peppermint extract (optional*)
Toppings:
1 container Simple Mills Chocolate Frosting
1/4-1/3 cup crushed candy canes or mint candies

 

Instructions: 

HEAT the oven to 350 F. for cake-like brownies or 375 F. for denser brownies.
MELT butter and allow to cool until lukewarm.
WHISK eggs, melted butter, vanilla, and peppermint extract in a large bowl. Add coconut sugar and baking mix; whisk until well blended.
SPREAD mix evenly into a greased pan.
BAKE 20 minutes at 375 F. or 30 minutes at 350 F.; cool in pan before frosting.
ONCE cooled, frost using Simple Mills Chocolate Frosting and top with crushed candy canes or mint candies.
SLICE and enjoy!
