Pumpkin Spice Cream of Nut Porridge
Makes 1 Serving*
1/2 cup full-fat coconut milk
1/3 cup Simple Mills Pumpkin Muffin Mix
1/4 cup water
1/4 cup plus 1 tbsp, chopped nuts of your choice or flaked coconut
Pure maple syrup
1. Place all ingredients except 1 tbsp of nuts/coconut into a small saucepan and cook over medium low heat for 3-5 minutes, stirring constantly.
2. Pour into a bowl and garnish with chopped nuts/coconut and a drizzle of pure maple syrup.
3. Then, enjoy a nostalgic taste of fall with each hearty spoonful!
Pumpkin Pie Pudding:
Prepare as directed above, excluding the chopped nuts/coconut, and refrigerate until chilled. Top with whipped coconut or heavy cream and a sprinkle of cinnamon.
