Salted Butter Pecan Cookies

1 box Simple Mills Vanilla Cake Mix
3/4 cup pecan halves, toasted
1 egg
1 Tbspvanilla extract
1/3 cup melted salted butter
1/4 cup almond milk
1/4 cup dark chocolate chips
1/2 Tbsp coconut oil


1. Preheat oven to 350°F

2. Line a baking sheet with a silpat or parchment paper

3. Combine egg, vanilla, butter and milk in a small bowl and whisk together

4. Add cake mix to a large bowl, pour the wet ingredients into the large bowl and stir together until just combined

5. Fold in the toasted pecans, don’t over mix

6. Refrigerate the batter for 10 minutes

7. Scoop heaping spoonfuls onto the baking sheet leaving a couple inches between each cookie as they will spread a bit while baking

8. Bake for 10 minutes

9. Remove from oven, let cool 5 minutes on baking sheet then transfer to a wire rack to cool completely

10. While cooling, melt the chocolate and coconut oil together in a small bowl. Mix until well combined

11. Once cookies are cooled, drizzle chocolate over the tops
