[Secret] Spinach Brownies

Wet Ingredients:
6 tablespoons of butter or oil (butter works best)

3 overflowing cups of loosely packed spinach
3 organic eggs
1 tablespoon of vanilla

Dry Ingredients:
1 box of Simple Mills Chocolate Muffin & Cake mix
3/4 cup of coconut palm sugar 


PREHEAT the oven to 375 degrees F.

MELT the butter and allow to cool until lukewarm.

ADD the melted butter and the 3 heaping cups of spinach to a blender, and blend until completely combined.

POUR the mixture into a medium bowl, and add the eggs and vanilla.

WHISK until combined.

COMBINE the Simple Mills Chocolate Muffin & Cake mix and the coconut palm sugar in a separate large mixing bowl.

POUR the wet ingredients into the dry ingredients, and whisk until combined.

POUR the brownie mixture into a greased pan (9x13 or 9x9) and bake for 20 minutes.

ALLOW to cool in the pan before cutting.
