Southern Biscuits & Country Gravy

Biscuits Ingredients:

1 Box Simple Mills Artisan Bread Mix
1/2 cup Lifeway Organic Kefir
2 eggs

Gravy Ingredients:

1 1/2 Tbsp grape seed oil, butter or lard/tallow
(if you want to go whole-hog… pun intended!)
3 Tbsp arrowroot
1 1/2 cup milk
(or sub 3/4 cup non-dairy unsweetened almond/coconut milk plus 3/4 cup water)
Sea salt and pepper


1. Preheat oven to 350°F

2. Combine wet ingredients in a bowl, and then mix in the dry ingredients

3. Drop by large mixing spoonfuls onto a greased pan and bake for 20 minutes

4. While biscuits are baking, heat oil in a skillet over medium heat, and then add arrowroot, whisking constantly to make a roux

5. Quickly whisk in milk 1/4 to 1/2 cup at a time until incorporated and gravy is smooth. Add sea salt and pepper to taste

6. Remove biscuits from oven

7. Generously ladle hot gravy over warm buttered biscuits to complete this savory, comforting dish

8. Garnish with sprigs of fresh thyme or parsley


For a heartier meal (and better flavor when using non-dairy milk), add cooked, chunked turkey/chicken sausage to gravy and then pour over buttered biscuits
