Spring Pea Bites

Yield: about 20 bites


1 cup fresh or frozen peas
1/2 tsp olive oil
1 tbsp lemon juice
1/4 tsp minced garlic
1/4 cup crumbled feta cheese
2 tbsp fresh mint chopped, plus more for topping
Salt and pepper, to taste
Red chili flakes, to taste

BRING a large pot of salted water to boil. When boiling, drop the peas and blanch for 1 minute if using fresh peas and blanch for 2 minutes if using frozen peas. Take off the heat, drain and run under cool water to stop cooking. Drain.
TRANSFER peas to a bowl, add olive oil, lemon juice and garlic. Using a fork, mash lightly.
ADD crumbled feta cheese and fresh mint. Mix. Taste and season with salt, pepper and chili flakes if using. Adjust seasonings by adding more lemon for acidity, mint for freshness and feta for cheesiness.
TOP each Simple Mills Sprouted Seed Cracker with a tablespoon of the pea mixture. Garnish with cracked black pepper.
