5 eggs (flax or chia eggs | 1 egg = 1 tablespoon flaxseed meal or chia seeds to 2.5 tablespoons water and allow to thicken to 5 minutes)
⅔ cup milk or water
3 tablespoons coconut oil
⅓ cup + 1 tablespoon mashed sweet potato
1 box Simple Mills Pancake and Waffle Mix

¼ cup collagen powder



WHISK eggs, milk, oil and sweet potato in a large bowl.
ADD mix and collagen, whisking until well combined.
POUR batter on to pre-heated waffle iron and cook on high according to waffle iron instructions.
SERVE: top with your favorite nut butter (we love almond!) and enjoy!
