Zucchini Banana Bread

2 Organic eggs
2 Tbsp coconut oil
1 cup water
1 small zucchini
1 small 6-inch over-ripe banana, or 1/2 cup mashed
1 tsp vanilla extract
2 tsp ground cinnamon



1. Preheat oven to 350ºF

2. Make Simple Mills Banana Muffin Mix according to instructions on box

3. Chop one small zucchini and add into food processor. Process until zucchini is finely chopped but not pureed

4. Put zucchini into a cheesecloth or nut milk bag and squeeze to remove excess water

5. Mix into the banana batter, followed by mashed banana

6. Pour batter into a greased 7.5x3.5 loaf pan

7. Bake for 40-50 minutes, or until toothpick comes out clean
