Apple Cinnamon Rolls

Ingredients:

4 ½ cups Simple Mills Organic Nut & Seed Flour All Purpose Baking Mix
3 tbs psyllium husk powder
½ cup + 1 tsp coconut sugar
1 ¼ cup whole milk
1 tbs active dry yeast
3 eggs, large
3 tbs olive oil 
 
Apple Filling
2 cups apples, peeled and diced
½ cup coconut sugar
5 tbs butter, softened
1 tbs ground cinnamon
 
Icing
2 oz cream cheese, room temperature
2 tbs honey
 

Instructions:

WARM milk between 100º-110ºF in a glass liquid measuring cup and mix in 1 teaspoon of coconut sugar.
STIR the yeast in and let proof for 10-15 minutes, or until frothy and bubbly.
MIX Simple Mills Organic Nut & Seed Flour All Purpose Baking Mix, psyllium husk powder, and coconut sugar together in a large bowl.
POUR milk and yeast mixture, olive oil, and eggs into the bowl with dry ingredients and mix until everything comes together.
TRANSFER the dough to an oiled bowl and cover. Let rise in a warm spot for 30 minutes or until the dough has doubled in size.
DUST a clean work surface with arrowroot starch (or a flour of your choice to use to powder the surface) and roll the dough out into a 14x12 inch rectangle. 
SPREAD butter over the dough, and sprinkle coconut sugar and ground cinnamon on top.
CUT 1 ½ inch strips from the 14-inch side and sprinkle the diced apples over the dough. 
ROLL each strip into a spiral and place in a 9x9 inch baking dish. 
COVER and place back in a warm spot for 30 minutes or until the rolls have doubled in size.
PREHEAT the oven to 375ºF. 
BAKE for 25-30 minutes. 
PREPARE the icing while the cinnamon rolls are baking. 
WHISK cream cheese, honey, and vanilla extract together. 
DRIZZLE icing over the slightly cooled cinnamon rolls. 
ENJOY warm!
