ADD all ingredients but the crackers to a food processor and blend until smooth.
TASTE and adjust seasonings to your liking by adding more dill, lemon juice or salt and pepper. If you would like your dip to be runnier, just add water or more olive oil, one tablespoon at a time, blending in between additions.
GARNISH with chopped fresh dill and more chopped preserved lemons.
