Cocoa Cashew Bites

This no-bake recipe puts a nutty spin on a classic rich and tasty dessert! 

Ingredients:

1 box Cocoa Cashew Creme Nut Butter Stuffed Sandwich Cookies
4 oz cream cheese
1 cup dark chocolate chips
Optional: Cashew butter drizzle

 

Instructions:

ADD Simple Mills Cocoa Cashew Creme Cookies into a food processor and pulse until cookies resemble sand.
ADD the cream cheese and pulse until everything comes together. 
SCOOP rounded tablespoons of truffles into your hand and roll into a ball. Place on a parchment-lined baking sheet and freeze for at least 10 minutes.
MELT chocolate chips in the microwave in 30-second increments stirring in between until melted.
DIP each truffle into the melted chocolate using a fork. Gently tap against the side of the bowl to get extra chocolate drips off and place on the parchment-lined baking sheet.
DRIZZLE with cashew butter and chocolate and sprinkle cookie crumbles on top. Place back in the freezer until hardened, at least 10 minutes
 

Tips:

How to Make Cocoa Cashew Cookie Bites without a Food Processor: Add Simple Mills crackers to a plastic or silicon bag and mash them gently with a mallet or rolling pin!
 
How to Make Vegan: Use 4 oz of vegan cream cheese in place of regular cream cheese.
