Elevated Guacamole ft. BOLD by Will Coleman

Ingredients

1-2 boxes Simple Mills Original Organic Seed Flour Crackers 
2 Hass avocados, halved, seeded, and peeled 
1-2 cloves garlic, minced 
2-3 limes, juiced 
1 tsp salt 
¼ tsp black pepper 

Beans
2 tbsp olive oil 
1 can pinto beans, drained and rinsed 
3 tsp BOLD by Will Backyard Barbecues Spice Blend 
¾ tsp salt 

Toppings 
¼ yellow onion, diced 
4 radishes, thinly sliced 
½ cup cherry tomatoes, cut into fourths 
¼ cup cilantro, chopped 
2 tbsp cotija cheese, crumbled 
1 lime, juiced 
1 jalapeno, thinly sliced 

Instructions

MASH avocados, garlic, lime juice, salt, and black pepper in a large bowl. 
TASTE and adjust seasonings if needed and set aside. 
HEAT olive oil in a large skillet over medium heat. 
ADD pinto beans when the oil is hot, and let cook for 2-3 minutes, not agitating too much. 
SPRINKLE  BOLD by Will Backyard Barbeques Spice blend and salt over the beans and mix. 
COOK until the beans are hot and slightly crispy. 
ASSEMBLE dip by spreading mashed avocado on a plate or shallow bowl. Top with seasoned beans, onion, radishes, tomatoes, cilantro, lime juice, and crumbled cotija cheese.
