Roasted Garlic & Beet Hummus made with Almond Flour Crackers Cracked Black Pepper Recipe


5 garlic cloves, unpeeled
2 medium beets, cooked and peeled
1 15 ounce can of chickpeas, drained and rinsed
2 tsbp lemon juice
2 tbsp tahini
2 tbsp extra virgin olive oil or aquafaba
3/4 tsp salt
Black pepper, to taste
Fresh parsley, for garnish
Black and white sesame seeds, for garnish

PREHEAT oven to 400ºF and line a baking sheet with parchment paper. 
PLACE unpeeled garlic cloves on the prepared baking sheet and bake for 20 minutes.
UNPEEL garlic cloves and add to a food processor or blender along with beets, chickpeas, lemon juice, tahini, olive oil (or aquafaba) and salt. 
PROCESS until smooth. Season with pepper. 
GARNISH with chopped parsley and sesame seeds.

You can buy precooked vacuum sealed beets to speed up the prepping process or simply wrap your unpeeled beets in foil and roast at 400ºF for 30-45 minutes or until fork tender. Peel and use as directed.
