Roasted Pumpkin Topped Pizza

This Roasted Pumpkin Topped Pizza is a savory way to enjoy pumpkin throughout the fall season and would be the perfect recipe for a cozy night in.
Ingredients:
For the Crust:
1 box Simple Mills Pizza Dough Mix
2 tbsp apple cider vinegar
2 tbsp grapeseed or vegetable oil
6 tbsp water
For the Toppings:
Roasted pumpkin
Manchego cheese
Fresh Sage (5-10 leaves)
Organic Marinara Sauce
For the Roasted Pumpkin:
1 small pumpkin
1 tbsp extra virgin olive oil
Salt and pepper, to taste
Instructions:
PREHEAT oven to 350ºF and line a baking sheet with parchment paper.
CUT pumpkin in half, scrape out seeds, and slice into smaller pieces. Place onto baking sheet, drizzle with olive oil and sprinkle with salt and pepper.
ROAST pumpkin until tender, about 20 minutes. Set aside for later.
MAKE Simple Mills Pizza Dough Mix according to directions on the box.
BAKE crust for 5 minutes without any toppings.
ADD sauce and desired toppings.
BAKE for an additional 15-20 minutes.
REMOVE from oven, slice and enjoy.
