Zucchini Banana Bread made with Almond Flour Baking Mix Banana Muffin & Bread Recipe


1 box Simple Mills Banana Muffin & Bread Mix
2 Organic eggs
2 Tbsp coconut oil
1 cup water
1 tsp vanilla extract
2 tsp ground cinnamon
1 small zucchini
1 small 6-inch over-ripe banana, or 1/2 cup mashed


PREHEAT oven to 325ºF
CHOP one small zucchini and add into food processor. Process until zucchini is finely chopped but not pureed
PLACE zucchini into a cheesecloth or nut milk bag and squeeze to remove excess water
MIX into the Simple Mills Banana Muffin & Bread Mix batter, followed by mashed banana, vanilla extract, and cinnamon
POUR batter into a greased 7.5x3.5 loaf pan
BAKE for 40-50 minutes, or until toothpick comes out clean
