Four Quick and Easy Cracker Appetizers
Just a few ingredients plus all the goodness of our grain free crackers make these appetizers a fast and healthy option for your next get-together.
#1) Fine Sea Salt Crackers with Brie and Jam
Top a Simple Mills fine sea salt cracker with a small square of brie cheese. Add a dollop of raspberry jam or preserves on top of the brie. Repeat with the remaining crackers in the box. Serve immediately.
#2) Sun Dried Tomato Crackers with Goat Cheese and Pesto
Bring a container of plain goat cheese to room temperature so that it is spreadable. Spread a generous portion on a Simple Mills sun dried tomato cracker. Top with a small scoop of homemade or store bought pesto. Repeat with the remaining crackers in the box. Serve immediately.
#3) Cheddar Crackers with Apples and Walnut Butter
Slice a sweet apple (like a Fuji) into small portions about the size of a cracker. Place one slice on a Simple Mills cheddar cracker, add a dollop of walnut butter, and sprinkle a bit of cinnamon on top to finish. Repeat with the remaining crackers in the box. Serve immediately.
-To make your own walnut butter, combine ½ cup shelled walnut pieces, 2 teaspoons honey, ¼ teaspoon cinnamon, and a pinch of salt in the bowl of a food processor fitted with the “s” blade attachment and pulse a few times to chop the nuts. With the processor running, pour in 3 Tablespoons neutral-flavored oil (such as grape seed or canola) and ½-1 tsp water (if necessary) until the butter is runny enough to dollop on top of the apple.
#4) Rosemary Crackers with Ricotta, Figs and Honey
Top a Simple Mills rosemary cracker with a small dollop of ricotta cheese. Slice a fresh or dried fig in half lengthwise and place, face down, on the ricotta. Drizzle with honey. Repeat with the remaining crackers in the box. Serve immediately.
Note: For best results, these appetizers should be prepared immediately before serving.
