Paleo Pumpkin Hummus (Legume-Free)

Yields approx. 2 cups

 

Ingredients

One 15oz. can of artichoke hearts in brine, drained and liquid reserved
1/2 cup canned pumpkin
One clove garlic
1/4 cup tahini
2 TBSP fresh lemon juice
1 TBSP olive oil + additional for garnishing
3/4 tsp. sea  salt
Ground paprika, optional
Desired amount of Simple Mills crackers, for serving

Instructions

  1. Place all ingredients in a metal mixing bowl or food processor and blend until smooth, adding a little of the reserved artichoke liquid if needed to thin the hummus to the desired consistency.
  2. Spoon into a serving bowl,  and refrigerate to chill (an hour or two, up to a few days).
  3. To serve, drizzle with high–quality olive oil and a sprinkle of paprika. Serve with assorted Simple Mills crackers and veggies to complete your paleo hummus platter!
