Vegan Cauliflower Buffalo Bites

Cauliflower Bites
1 medium head of cauliflower, cut into 2-inch florets
1 cup water
2 cups Simple Mills Pizza Dough Mix
1/2 tsp. smoked paprika

Buffalo Sauce
1 cup apricot or mango fruit-sweetened jam or spread
1/4 cup sriracha chile or your favorite brand of hot sauce
1/4 cup orange juice
1/2 tsp. garlic powder


Preheat the oven to 450 degrees F. Mix all breading ingredients, except cauliflower, in a bowl until blended. Toss 5-7 florets at a time in the breading mixture with a spoon, and then place them on a greased jelly roll pan. Bake for 20 minutes. 

While the cauliflower bites are baking, mix all sauce ingredients in a small pot on the stovetop and heat on medium until boiling. Boil for one minute, then remove from heat. Once cauliflower is done baking, toss florets in the buffalo sauce with a spoon. Alternatively, place the sauce in a small bowl on the side for dipping the cauliflower bites.

Serve immediately with celery and carrot sticks, and a zesty paleo ranch or homemade blue cheese dressing.
