Chicken Salad Two Ways (Paleo and Vegan)

Ingredients

1 20-ounce can of jackfruit in brine OR 1 cup cooked chicken chopped into bite sized pieces or shredded
2 celery stalks, finely diced
1/2 cup red grapes, halved
3 tbsp vegan mayonnaise OR regular mayonnaise if not vegan
2 tbsp red onion, finely diced
2 tbsp lemon juice
1 tsp nutritional yeast
1/2 tsp Dijon mustard
1/4 tsp celery salt
1/4 tsp garlic powder
A pinch of cayenne
Salt and pepper, to taste
1 box Simple Mills Sundried Tomato Almond Flour Crackers

 

Instructions

If using jackfruit (vegan)

DRAIN and rinse the jackfruit and place on a large cotton kitchen towel. Gather all corners together and squeeze out all the water.
ADD to a large bowl. Remove the tough core and seed pods.
ADD the rest of the salad ingredients. Mix, taste and adjust seasonings as desired.
SERVE with Simple Mills crackers.

 

If using chicken (paleo)

ADD all the salad ingredients to a large bowl. Mix. Taste and adjust seasonings as desired.
