Grain-free Cinnamon Rolls

Yield: 15 rolls
2 tbsp flax seeds + 6 tbsp water (to create flax egg)
1 1/4c Simple Mills Artisan Bread Mix
1 cup tapioca flour
1/4 cup + 2 tbsp coconut flour
1 tsp baking powder
1/2 tsp ground cinnamon
Pinch of salt
2/3 cup nondairy milk of choice
1 tsp vanilla extract
1 tbsp coconut oil
1 tbsp maple syrup
1/4 cup coconut sugar
1 tsp ground cinnamon
1/3 cup dried raisins
2 tbsp walnuts
Simple Mills Vanilla Frosting (optional)
PREHEAT oven to 350ºF and line a baking sheet with parchment paper.
ADD flax seeds and water to a small bowl. Let sit for 5 minutes.
ADD Simple Mills artisan bread mix, tapioca flour, coconut flour, baking powder, cinnamon and salt to a large bowl. Mix to combine.
ADD flax and water mixture, milk and vanilla extract to the dry ingredients. Mix until a dough forms.
FLOUR your working surface with a bit of tapioca flour then transfer the dough onto it.
ROLL OUT the dough into a 9x12” rectangle.
BRUSH the dough with coconut oil and maple syrup. Evenly distribute the coconut sugar, cinnamon, raisins and walnuts onto the dough.
ROLL the dough carefully using your hands.
CUT into 15 cinnamon rolls and bake for 25 minutes.
GARNISH with some Simple Mills vanilla frosting and some more raisins and walnuts.
