Oscar Nominated Chocolate Truffles

1 1/2 box Simple Mills Chocolate Muffin & Cake Mix (will need 2 boxes)

3 Tbsp coconut oil

2 flax eggs (2 Tbsp ground flaxseed + 6 Tbsp water)

1/4 cup almond milk

1 tsp vanilla extract

1/3 cup goji berries

1/4 cup crushed cashews

1/4 cup raw chocolate granola cereal

1/3 cup unsweetened shredded coconut

1/4 cup raw cacao or unsweetened cocoa powder



1. Begin by creating your flax eggs and letting them sit in a small ramekin for about 5 minutes until thickened. This will be your egg substitute so that you can eat the truffles raw and straight out of the freezer

2. Add your flax eggs and coconut oil into a bowl, mix well and add in a full box of Simple Mills chocolate muffin mix followed by ½ cup mix from a second box. Add in almond milk and vanilla extract. Mix well

3. Put plastic wrap over the bowl and pop into your freezer for an hour.

4. Remove from freezer and roll into tablespoon sized balls. Roll each ball into toppings of choice and place into an air-tight container. If you would like more or less toppings, go for it

5. Place back into freezer for 8 hours minimum but preferably overnight for best consistency
