Sunny Side Egg Sandwich

4 organic eggs
1 Tbsp water
1 tsp apple cider vinegar
1/4 cup sliced, roasted beets
2 Tbsp dairy-free chive cream cheese (i.e. Kitehill)
1/4 cup mixed greens
1 Organic egg


1. Preheat oven to 350┬║F

2. Follow Simple Mills box instructions for Sandwich Loaf

3. Place beet slices on a greased baking sheet and cook for 15 minutes until well-roasted

4. Allow loaf and beets to cool

5. Slice bread loaf and, smear 1 cream cheese on two slices, followed by greens and beets

6. Prepare egg how you prefer: fried, over-easy or scrambled*

7. Place in between the two slices of bread and cut in half.

*If taking this on the go, scrambled eggs work best!
